Baby its cold outside! ❄️ I just want to snuggle up and never move and I understand if you feel the same way! So I’ve been thinking of ways to make cooking much much easier. Get ready for the easiest, yet tastiest winter chicken casserole EVER! You literally throw it all in a casserole dish or slow cooker in the morning, stick it on low while you’re at work and come home to your kitchen smelling like an absolute treat and dinner ready! No hassle!

Lets Get To It

Ingredients

450g Chicken breast (you can get the pre-diced stuff)
450g Packet of casserole vegetables
2 pots chicken stock
2 sprigs Rosemary
1 Parsnip
2 sprigs Thyme

Instructions

1. Chop your parsnip up and add it to a casserole dish with the rest of the ingredients. Leave the rosemary sprigs intact but pull the thyme sprigs apart.
2. Add hot water to the casserole dish until everything is submerged. Then place the lid on the dish and put it in the oven on Gas Mark 3 for at least 4 hours or even put it on in the morning and remove it when you come home from work. It wont look like this as it wasn’t fully cooked when taking photos, it looks less aesthetic but tastes INCREDIBLE! I took the left overs to work for lunch for 3 days in a row!
3. Serve. This can be kept in the fridge for 3 days or even frozen.
