Peppermint bark is by far one of the most incredible sweet treats at Christmas, but it really does get sickly fast and no wonder with the amount of sugar in there. Something’s in life just shouldn’t be touched (ahem Sugar Cookies) butt.. I do certainly think that chocolate bark is one that can be made better. I got the Green and Blacks organic chocolate, mainly because they were on 3 for 2 offer and secondly because they are one of my go to dark chocolates, the ginger one… Oh my! Anyway this recipe is incredible! The mint in the chocolate brings out that minty flavour without it being overpowering and the pomegranate seeds take away the dry-ness you can get with some barks.. Lastly the salt, I believe the salt makes this recipe. Not enough and it tastes like dark chocolate, too much and its like swallowing sea water, but that right amount.. Makes this bark absolutely perfect!! Break it up and share it out with friends and family because trust me when I say you’ll want to eat it all!

Lets Get To It

Ingredients

100g of each Organic White Chocolate, Organic Dark 70% Chocolate, Organic Dark 60% Chocolate with Mint
80g Pomegranate Seeds
2-3 Pinches Rock Salt

Instructions

1. Melt both your dark chocolates together,and the white chocolate separately. Be careful because chocolate burns easily. We recommend heating the chocolate in a jug surrounded by boiling water.
2. Once both have melted, line 1 large or 2 medium trays with parchment paper and spread the dark mix all over it, then drizzle the white chocolate all over it and using your spoon swirl them together. Drop your pomegranate seeds all over followed by the rock salt.
3. Allow to set in the fridge before breaking up and serving.
